All Around The Campfire


We had a great Thanksgiving involving way too much food, because what says Thanksgiving more than eating until even your skin is too tight! Way up on my list of things for which to be thankful is being lucky enough to love camping!

Now that the motorhome is winterized until at least early March, I have to find other ways to occupy my mind, and many of them revolved around planning for 2017.

I have trips to plan  – so many trips. My camping buddy and I have already started to pencil in some dates for a few joint trips. I’m trying to pin down dates for our summer vacation to Lake Tahoe. I’m making lists of new places to go while also making sure we have time to hit up a few favorites.

I want to do a better job of meal planning. I have this tendency to hoard food in the motorhome, because of what ifs. What if we get stranded for 6 months and no one can find us to perform a rescue even though we never stray far from the road and always stay in developed campgrounds? We wouldn’t starve. Trust me on that one. At one point last summer I had 7 pounds of pasta in the motorhome. SEVEN! I don’t even like pasta! I want to make a list of necessities and recipes that use similar ingredients. I’ve also started experimenting with new appetizer recipes, because I would rather snack than eat a full meal most of the time. (This one from is amazing! Bacon Cheddar Dip from SpendWithPennies)

Even looking back at pictures from last year, I can see that I was blinded by the excitement of camping season.

As stated above I carry way too much food. I have a largish cabinet above the kitchen sink, and there is no reason that shouldn’t hold ample food, so why do I also use all three cabinets above the dinette? From now on those 3 will not be food storage unless we are going on an extended trip and taking along the teenager that is a bottomless pit.

I need to figure out the bedroom closets. The narrow closet near the bed feels hopeless, but I’m determined to conquer the darn thing. I think I am going to look into installing shelves, which means that I will rethink myself over and over and take approximately 87 measurements. The bedroom wardrobe is quacking becoming my arch nemesis. After 3 seasons of camping, I still can’t figure it out. I put in plastic drawers and then realized I can’t open the drawers. Useful, right?

I definitely have to do something about my storage bays. I actually made quite a bit of progress in my reorganization of them last summer. I contained the little stuff and made the bigger things more accessible. I even pared it down quite a bit.  However, there is still work to be done, and still things I could easily take out and not miss.

Sadly, I still have 3.5 months of dreaming and planning. In the meantime I will go back to my  Hallmark Christmas movies and my new favorite cocktail…the Cranberry Moscow Mule!


Cranberry Moscow Mule:

  • ice
  • 1 to 2 oz vodka
  • 4 to 6 oz ginger beer (I like Cock & Bull)
  • 1 oz cranberry juice (I prefer 100% juice over cranberry cocktail)
  • lime wedge, lime juice, fresh cranberries (all optional)

Mix together in a copper cup (not a requirement, but fun to have) and enjoy!
